I set out to make my bread omelette for lunch yesterday but as is often the case, changed my mind because what I realllllly fancied was a cheese toastie!

Turned out rather yummy, here’s what I did.

What you need

  • 1/2 cup grated cheddar

  • 1 small red onion, sliced fine

  • 1 green chilli, chopped fine

  • 2 garlic cloves, finely sliced

  • A couple of large knobs of butter

  • 1 tbsp fresh coriander, chopped fine

  • 2 slices of bread - whatever your favourite is

  • Salt and pepper

  • Electric sandwich toaster/hob-top toastie maker/griddle pan

What you do

  1. Pre-heat your toastie maker (if you’re using one), with a little butter. If you’re using a hob-top toastie maker, put a pat of butter on each side. If you’re pressing them by hand, nothing to be done yet!

  2. Melt a generous knob of butter in a frying pan on medium, and fry up the onion, garlic and chilli. You want them starting to brown. Keep aside

  3. Lay your bread slices out

  4. Pile one slice with the cheese

  5. Then spoon on the onion-garlic-chilli

  6. Sprinkle salt and pepper

  7. Sprinkle on the coriander

  8. Top with the second slice of bread

  9. Into the toastie maker (electric or hob-top) or onto a pan with a bit of butter melted on it

  10. Take a moment to appreciate that sizzle!

  11. Press down if you’re making your toasties on a griddle pan

  12. When they’ve had a few minutes, slather on some butter

  13. Flip

  14. Slather on some butter on the other side

  15. Let the one side crisp up, and then the other side

  16. All this while, appreciate all that melting oozing sizzling cheese!
