Recipe: Messy Eggs

This brunch recipe was an accident, but it turned out great so it deserves an identity I reckon!

What you need

  • 2 eggs, beaten with a pinch of salt and black pepper

  • 3 tbsp grated cheese (I used cheddar)

  • 6-7 cherry tomatoes, halved

  • a small handful of spinach, roughly chopped

  • 2 garlic cloves, chopped fine

  • 1/2 red onion, sliced thin

  • 1 green chilli, chopped fine

  • Butter

What you do

  1. Heat a generous knob of butter in a frying pan

  2. Fry the garlic until turning golden brown

  3. Add the onions and fry until starting to brown

  4. Then the green chillies

  5. Add the cherry tomatoes and sauté until starting to shrivel

  6. Then the spinach and let it start to wilt

  7. Stir the grated cheese into the beaten egg and pour over

  8. This is where the happy accident happened! Don’t let the egg set at the bottom - flip it over when it’s starting to brown but hasn’t quite set yet. It’ll break when you try and do that, and that’s what you want! All that gooey cheese and spiced tomatoes and spinach, onion and garlic doing their thing 😃 Allow it cook for just a couple more minutes so the egg isn’t raw and then slide on to toasted buttered sourdough.
